Fan Assisted Ovens - A Beginner's Guide

When you burn your finger you blow on it to cool it down so it is counter intuitive that putting a fan in an oven will make it hotter. This article is a beginner's guide to fan assisted ovens. It does not include product recommendations but should help you understand how these devices work and provide insight into whether they are right for you.

Convection Ovens

When you cook on a hob heat is transferred from an energy source (the flame if you are cooking with gas) via conduction. This means that the hobs gets hot which makes the pan get hot which in turn makes the food get hot. When you cook in an oven you are working in a different way. The heat source is actually warming the food by transferring energy to the air and it is the air which warms the food.

Warm air will naturally rise, this is known as convection. Conventional ovens rely on convection to move hot air around and keep a constant flow of heat going into food. The problem with this is that hot air will pool in the top of the cavity and end up heating the roof of the oven. This means that in order for the whole of the oven to be filled with hot air you first need to pre-heat the metal sides in order to stop them from soaking the energy out of the air.

A fan-assisted oven (which is confusingly also known as a convection oven) forces air from the heat source directly into the centre of the cooking space so that anything placed there gets hot. Energy is still transferred from the air to the walls but because the fan is constantly forcing hot air in and around the cavity it maintains a steady temperature.

What this means

1. Fan assisted ovens do not need preheating - Because the fan forces hot air directly into the cooking area a fan assisted oven either takes no, or very little, time to preheat.

2. Fan assisted units provide even cooking - As both hot and cold air are pushed around the cavity the difference between the warmest and coldest places is reduced.

3. Fan assisted cooking is quicker - Because they transfer energy more efficiently than regular machines they give the same results at a lower temperature and in less time. This is can be useful but it is also the reason why so many people end up burning their food when using a fan assisted oven.

Preparing Lobster Tails

Lobster, once the food of poor farmers, is now considered a special treat for many. Although some people prefer the meaty claws, I think that lobster tails are the best tasting part of this delicious creature. A great meal of lobster tails might seem like a gourmet feast to your guests, but they are actually quite easy to prepare. Add a little sprig of garnish and a fancy side dish and you're sure to impress even your mother in law.

Your lobster tails might start off a fresh or frozen, being in New England, fresh lobster is easy to come by but frozen might be all you can get in some parts of the country and in the off season. If your lobster tails are frozen, you need to thaw them out (you can cook them frozen but they will not be as tender). Put them in the fridge for 10 hours or so or thaw them in the microwave on defrost - be very careful if you choose this method as you don't want them to start cooking in the microwave.

After they are thawed, remove the meat from the shell by cutting open the back of the shell - split it down the middle and open it up to reveal the meat. Lift the meat out - you can leave the fan part of the tail on for show or not. Remove the vein.

Boiling Lobster Tails
Boil a pot of water large enough for all the tails to float in, add 1 tsp salt for each quart of water. Drop the tails in the boiling water and cook for about 1 minute per oz thawed (so 10 0z of tails needs to cook for 10 minutes). If you are cooking a lot of tails, add a minute or two on to the total time.

Cooking Lobster Tails in the Oven
Lobster tails can be baked or broiled in the oven. To cook thawed lobster in the oven,set the oven to 400 degrees F. Brush the tails with butter and bake for 8 to 10 minutes. If broiling, place the tails 4 or 5 inches from the heat and broil for 2 - 5 minutes. When broiling keep a very close eye on them so that they don't burn on the tops.

Cooking Lobster Tails On The Grill
Oil the grill to keep the lobsters from sticking. Put the grill on medium heat. Brush the lobster tails with butter and place on the grill. Make sure that the tails do not burn - if there are any flames on the grill move the lobster away from it. Grill on each side for 4-5 minutes.
Take care not to overcook your lobster or it will be rubbery and tasteless. Lobster is cooked when it is no longer transparent.

Install an Over-the-Stove Microwave

Installing an over-the-stove microwave will serve two purposes. The specially designed over-the-stove microwave will also serve as the range vent. An over-the-stove cupboard is a must to install the microwave. There needs to be at least 45" between the cupboard and the stove. There should also be a 30"w x 12"d space for the over-the-stove microwave to fit into. This is a heavy task. Asking a friend to help during the installation is recommended.

Convection Ovens

Prepare to install the over-the-stove microwave by pulling the stove out of position to allow more room to work. Remove any molding from the bottom of the cupboard where the microwave will be installed.

Remove the microwave from the carton by opening the box. Removing instructions, and installation parts.

Fold the lid flaps out and carefully turn the box upside down, letting the microwave rest on the packaging. Slide the box off of the microwave and remove the packing material.

Unscrew the 2 screws on top of the mounting plate that is attached to the bottom of the microwave. Remove the mounting plate. Save the plate and screws for use later in the installation.

Locate the wall studs in the wall the microwave will be installed on. Mark the studs with a pencil. The mounting plate needs to be installed into at least one stud.

Measure the depth inside the front overhang on the cupboard. Draw an horizontal line on the wall even with the overhang.

Locate the center of 30" and draw a vertical line from the cupboard to where the microwave will extend and an horizontal line along the bottom. Using the provided template, drill 5/8 holes, following the template, along the bottom. Drill a 3/16 hole if drilling into a stud.

Attach the mounting plate with bolts and nuts provided, to the wall using the holes drilled in the previous step. Use the provided toggle bolts if not screwing into a stud. Tighten all bolts and nuts.

Tape the provided cupboard template to the bottom of the cupboard. Drill a hole large enough for the electrical cord to fit through.

Lift and tilt the microwave forward. Slide the four lower tabs of the mounting plate into the holes in the microwave. Tip the front and press against the bottom of the cupboard.

Attach the supplied, self-aligning screws, through the holes drilled into the cupboard. Turn the screws with the screwdriver 2 complete turns. Insert and completely tighten the center screw. Return to the outer screws and finish tightening them.

Insert the provided grease filter into the slot on the bottom of the over-the-stove microwave.
