Among the various types of ovens, the most common is the traditional radiant oven. It consists of a heating element at the bottom, racks for placing food in the middle and in some cases, an upper heating element for broiling. Convection and steams ovens are comparatively newer versions of the conventional design.

A convection oven has many advantages over the traditional radiant one. In a convection oven, forced air is used to evenly circulate heat and ensure well-spread out heating. The advantages of this type of oven include even heating, reduction in cooking time and retention of moisture in the roasted food. The reduction in cooking temperature and time is significant in this oven type. Compared to the radiant design, convection oven can give the same results at 25 degrees lower temperature. Also, for many preparations, the cooking time is 25% less in convection oven than radiant. Due to the improved visual appeal, flavour and texture of the food cooked in convection ovens, they are popular for use in commercial restaurants.

Steam oven

The steam oven is gaining popularity as a healthy way of cooking. Usually these ovens do not need to be hooked to water supply as they are equipped with a reservoir, which is to be filled with water at the beginning of the baking process. The advantages of a steam oven include shorter cooking time, no requirement of supplementary fat to keep food preparations like meat from drying and retention of nutrients. Based on the model, the temperatures can vary from 100 to more than 300 degrees Celsius. In a steam oven set at 100 degree Celsius, you can cook a full chicken in 20 minutes, which takes over an hour to cook in a traditional model. Along with the advantages like healthier and faster cooking, steam ovens have few disadvantages. The main disadvantage is that it can't brown things. This can result in pallid looking meat, bread and pies. You may need to use a conventional model to brown preparations made in a steam oven, which means an added step. Some types of ovens have a combination of steam and convection in which a fan is used to circulate steam. This reduces the cooking time, but does not help in browning.

Regarding availability and prices the most readily available in the U.K. are conventional radiant ovens with a good selection of convection ovens also being available although at slightly higher price points. Steam ovens are new to the market and consequently the price points are significantly higher than the 2 traditional options.

The countertop convection oven is a toaster oven built on the model of the conventional convection oven.
